Serves 4
50g plain flour
1 tsp paprika
2 eggs
125g fine fresh breadcrumbs
2 tbsp freshly chopped parsley
4 boneless, skinless chicken breasts, cut into strips
2 tbsp sunflower oil
Step 1
Preheat the oven to 190◦C (Gas mark 5)
Mix the flour and paprika in a bowl and season.
Step 2
Beat 2 eggs in a second bowl.
Step 3
Combine the breadcrumbs and parsley in a third bowl.
Step 4
Dip the chicken into each bowl, then place on an oiled tray and bake for 20-25 minutes.
